Slow Cooker Chicken parmesan

2-4 boneless, skinless chicken breast halves (I cut mine into strips, to make them into more reasonable serving sizes for the kids)
1/2 cup plain bread crumbs
1/2 cup grated Parmesan cheese
1 tsp. Italian seasoning
1/4 tsp. ground black pepper
1/4 tsp. kosher salt
1 Tbs. olive oil
1 egg, beaten
4-6 slices mozzarella cheese
1 jar (28-ounces) favorite marinara sauce

Directions: Drizzle 1 tablespoon olive oil over the bottom of the crockpot stoneware.
In a medium bowl, beat egg. In second medium bowl, mix the bread crumbs, spices, and grated Parmesan cheese all together.

Dip chicken in beaten egg and then toss into bread crumb mixture to coat completely on both sides. Place chicken breasts on bottom of crockpot. Place a layer of mozzarella slices on top of breaded chicken breasts. Cover cheese layered chicken with entire jar of sauce.

Place lid of crockpot securely on and turn heat to LOW for 6-7 hours or HIGH for 3-4 hours. Serve over cooked pasta of your choice.

Slow cooker corned beef

Ingredients:
6 carrots, cut into chunks
2 onions, chopped
2-3 lb. corned beef brisket with seasoning packet
12 oz. can beer (non alcoholic is fine)
2 Tbsp. yellow mustard
1/4 cup brown sugar
1 cup water
8 wedges cabbage

Preparation:
In 4-6 quart crockpot, combine carrots and onions. Rinse corned beef under cold running water and pat dry with paper towels. Place in crockpot and sprinkle with contents of seasoning mix. Pour beer over brisket and spread mustard on brisket. In small bowl mix brown sugar with water and pour over brisket. Cover crockpot and cook on low setting for 10-12 hours. I did high for 8 hours an it was great!

Remove corned beef from crockpot and cover with foil, then put into 200 degrees F oven to keep warm. Add cabbage wedges to vegetables and liquid in crockpot. Cover crockpot and cook on high for additional 30-40 minutes or until cabbage is crisp tender.

*I didn't do the cabbage I put in red potatoes instead!

Crockpot Chicken Noodle Soup

5 cups hot water
2 TBS. instant chicken bouillon
46 oz. chicken broth
2 cups chicken, boiled and cut into chunks
1 tsp. salt
20 baby carrots
3 celery stalks, cut into chunks
3 Cups. egg noodles (uncooked)

Combine all ingredients, except egg noodles into crockpot. Cover and cook on LOW heat 4 to 6 hours. Thirty minutes before serving, stir in egg noodles. Cover and cook on LOW heat for 30 minutes.

Crockpot Chicken Cordon Bleu

6 boneless, skinless chicken breasts
6 slices Swiss Cheese
6 slices ham
1 TBS margarine
2 cans cream of chicken soup
10 TBS. milk

Flatten chicken with mallet. Cover each breast with cheese and ham. Roll up and secure with toothpicks. Brown each chicken roll in margarine in skillet, making sure pieces are fully covered. Cover and cook on LOW 4 hours. (This makes a gravy for chicken and rice or potatoes.

Crock Pot chicken tacos

1 24 oz jar of Pace Picante sauce (medium or mild)
1 -2 cups brown sugar
4 chicken breasts
stir all together in crock pot and cook for 4-8 hours remove chicken and shred. Return chicken to crock pot and cook an additional hour.

Make tacos with flour tortillas, shredded cheese, lettuce, tomatoes, onions, olives, beans, and anything else your little heart desires!
