Slow cooker corned beef

Ingredients:
6 carrots, cut into chunks
2 onions, chopped
2-3 lb. corned beef brisket with seasoning packet
12 oz. can beer (non alcoholic is fine)
2 Tbsp. yellow mustard
1/4 cup brown sugar
1 cup water
8 wedges cabbage

Preparation:
In 4-6 quart crockpot, combine carrots and onions. Rinse corned beef under cold running water and pat dry with paper towels. Place in crockpot and sprinkle with contents of seasoning mix. Pour beer over brisket and spread mustard on brisket. In small bowl mix brown sugar with water and pour over brisket. Cover crockpot and cook on low setting for 10-12 hours. I did high for 8 hours an it was great!

Remove corned beef from crockpot and cover with foil, then put into 200 degrees F oven to keep warm. Add cabbage wedges to vegetables and liquid in crockpot. Cover crockpot and cook on high for additional 30-40 minutes or until cabbage is crisp tender.

*I didn't do the cabbage I put in red potatoes instead!

Mexican Lasagna

9 Lasagna noodles (Cooked and drained)
1 lb. Hamburger
1 clove garlic
1 can refried beans
1 can sliced olives (drained)
1 can Rotel diced tomatoes
Shredded cheese (Cheddar, Mozzarella, Mix..)

Brown hamburger meat with garlic. Drain. Mix olives, refried beans, and tomatoes with hamburger. Spray 9x13 pan. Layer with Noodles, meat mix and cheese (3x). Top with cheese. Bake at 350* for 30 minutes or until bubbly and brown on top.

Roast Beef sandwiches

2.5-3 lb. beef roast; aim for something on the lean side (you can use a frozen roast if you want)
2 Tbsp. olive oil
salt and pepper
2 1-ounce packages dry onion soup mix
2 c. water
2 cans beef broth
6-8 large buns (make your own if you're feeling ambitious!)
Swiss, provolone, or mozzarella cheese, shredded or sliced.

Heat oil in a large pot over medium-high heat and rub roast with salt and pepper.

When very hot, carefully place roast in pan and sear on all sides. You're not cooking the meat, you're just browning it quickly on all sides to add flavor and seal in the juices. Place in crockpot and sprinkle with onions soup mix. Pour water and beef broth over roast. Cook 8-10 hours on low or cook 4-5 hours on high and another 3-4 hours on low. It's hard to screw this part up; basically, the longer it cooks, the more tender it will be. But you know it's done when you pop a fork in it and the meat just falls apart. When meat is ready, shred with a fork. Place meat in crusty rolls. Top with cheese and broil open-faced in the oven or toaster oven for a few minutes, until bread is golden and cheese is melty. And don't even think about walking away--things can go from lightly-toasted to on fire within a matter of seconds when you're using your broiler.Ladle juices into small cups for dipping and enjoy!

FREEZER DIRECTIONS:
Prepare roast through the searing step; after meat has cooled, place in a plastic freezer-safe container (think Gladware), cover with onion soup mix and bouillon, and freeze. When ready to cook, pop it straight into the crockpot (frozen), add 2 cups of water, and set to high until warm or, even better, simmering. Turn to low; cook for a total of 8-10 hours.

beef n broccoli low mein

1 pkg. spaghetti, cooked to al dente
1 tsp sesame oil
1 Tbsp. peanut oil
1 Tbsp. fresh ginger, minced
4 cloves garlic, minced
3 c. broccoli, chopped
1 1/2 c. onion, sliced thin
1 Lb. flank steak, cut into strips
3 Tbsp. soy sauce
2 Tbsp. brown sugar
1 Tbsp. oyster sauce
1 Tbsp. chili paste
1/2 tsp. red pepper flakes (optional)
*eggs (optional--see note below)
Cook pasta according to package directions (don't add salt), drain. Combine pasta and sesame oil, tossing well to coat.

While pasta cooks, heat peanut oil in a large nonstick skillet over medium-high heat. Add the ginger and garlic; sauté 30 seconds. Add broccoli and onion; sauté 3 minutes. Add steak, and sauté 5 minutes or until done. Add pasta mixture, soy sauce, and remaining ingredients (minus the egg if you are going to use egg on the top); cook 1 minute or until lo mein is thoroughly heated, stirring constantly.

Beef & brown sugar enchiladas

1 1/2 lb. lean ground beef
1 can black refried beans
1 can red enchilada sauce, divided
1/3 cup brown sugar-- or to taste
1/2 tsp. onion powder
2 cups grated cheddar cheese, divided
10-12 flour tortillas

Brown ground beef in a large pan. Drain off fat & add refried beans, 1/2 of the enchilada sauce, brown sugar & onion powder. Mix well & bring to a simmer. Remove from heat.
Fill one tortilla with about 1/4 of a cup of filling & 2 Tbsp. cheese. Roll up & place in a 9x13 pan. Repeat process until pan is full. Pour remaining enchilada sauce over prepared enchiladas. Sprinkle with remaining cheese.
Bake at 350 degrees for 30 minutes. Serve with sour cream, chopped tomatoes, sliced olives, diced onions, shredded lettuce, avocado or guacamole.

Roast Beef with Au jus

2-3 Lbs. oven roast
2 cans beef broth (about 4 cups)
2 pkgs Lipton Onion Soup mix
French hoagie or sub rolls (whatever bread you like to do)
Swiss cheese slices

Put oven roast in a crock pot. Add beef broth and soup mix. Cook on LOW for 7-8 hours. Shred roast with a fork, then return the shredded beef to the crock pot for a few more minutes (to absorb more of that juicy goodness). Slice open the bread and place a good amount of beef on one side (scoop out some of the bread first if you don't like it really bread-y). Place a slice or two of Swiss cheese over the shredded beef and broil for a minute or so until cheese starts to bubble and brown a little. Remove from broiler and serve. Use a ladle to scoop out some of the juice from the crock pot and serve as au jus.

Chinese Casserole

1 lb ground beef cooked with celery and onion, then drained
put in 1 can cream of chicken soup, 1 and 1/2 cups warm water,
1/2 c. uncooked rice, 1/4 c. soy sauce and 1/4 teaspoon black pepper.

Bake in a covered casserole dish @ 350 for 30 minutes, remove cover and bake for 30 more minutes, put chow mein noodles on top for the last ten minutes of baking.

Teriyaki Meatballs and Rice

1 12 oz. bag frozen meatballs (16-20 meatballs)
1 12 oz. bottle teriyaki marinade
1 8 oz. can pineapple chunks in juice
1 small green bell pepper, diced
2 carrots, peeled and cut into matchsticks
1/2 cup thinly sliced green onions with tops
2 cups hot cooked rice

Heat the meatballs in the microwave until warm through. Set aside.

In a medium saucepan, combine teriyaki marinade, pineapple chunks and juice, bell pepper, and carrots. Add meatballs. Simmer over medium heat for 10 minutes.

Add to rice and garnish with green onions.

Broccoli beef

¼ c. low sodium soy sauce (I just use regular)
1 T. chunky peanut butter
½ c. water
1 T. cornstarch
2 tsp vinegar
¼ tsp pepper
1/8 tsp powdered ginger
½ tsp garlic powder
½ tsp onion powder
2 T. oil
½ lb (or more) diced or cubed beef, chicken, or pork (I’ve tried pork chops & beef)
2 c. broccoli cut into small pieces
steamed rice

In a small bowl, combine the soy sauce, peanut butter, water, cornstarch, vinegar, pepper, ginger, garlic powder, and onion powder. Mix well and set aside. In large skillet or wok, heat the oil. Add beef and cook, stirring constantly, for 2-3 minutes. Add the broccoli, and cook for another 3-4 minutes (or until meat and broccoli are almost done), stirring constantly. Add the sauce and mix thoroughly, then continue to stir until the sauce thickens. Serve over steamed rice.

Meatballs

Yummy meatballs
1 lb. lean ground beef
1 egg
2 Tbsp. water
1/2 cup bread crumbs
1/4 cup minced onion
1/2 tsp. salt
1/8 tsp. pepper
Preparation:

Preheat oven to 350 degrees. In large bowl combine egg, water, bread crumbs, onion, salt and pepper and combine. Add ground beef, broken into chunks, and mush with your hands to combine. Form into meatballs about 1" in diameter and place on a broiler pan. Bake at 350 degrees for 25-30 minutes until meatballs are no longer pink in center. Cool and freeze, or use in your favorite meatball recipe.
