Fresh Pear & Apple Cake with Maple Cinnamon Cream Cheese Frosting

Cake Ingredients:

4 cups peeled and chopped pears and apples
1 cup sugar
1/2 cup brown sugar
3 cups sifted all-purpose flour
1 teaspoon salt
1 1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1 teaspoon ground cinnamon
4 egg whites
1/2 cup canola oil
1 teaspoon vanilla
1 cup chopped walnuts

1. Mix pears, apples, and sugars and let sit for one hour.
2. Preheat oven to 325 degrees. Spray 13×9 pan with cooking spray and line with parchment paper.
3. Mix egg whites, oil, and vanilla. Add to fruit mixture.
4. Whisk flour, salt, baking soda, nutmeg, ginger, cloves, and cinnamon. Stir in the fruit mixture. Pour batter into prepared pan.
5. Bake at 325 degrees for 45 minutes. Remove from oven and cool completely before frosting.
6. Frost and top with chopped nuts.

Maple Cinnamon Cream Cheese Frosting

1 8 oz. package cream cheese
1/2 stick unsalted butter
1/2 cup pure maple syrup
1 cup powdered sugar
1/4 teaspoon vanilla
1/4 teaspoon ground cinnamon

1. Soften butter and cream cheese.
2. Whip all ingredients until soft and creamy.

This cake is delicious! However, there is something wrong with the measurements on the icing. I think there are not nearly enough cups of powdered sugar. This was a runny mess (and I made is exactly as printed, not subs). Could you advise, or correct
