Chicken Zucchini casserole

1 (6oz) package stuffing mix
1/4 cup melted butter
3 cups diced zucchini
2 cups cooked chicken
1 can cream of chicken soup
1 medium carrot
1/2 cup chopped onion
1/2 cup s. cream

In large bowl mix stuffing and butter. Set aside 1/2 cup for topping. Add zucchini, chicken soup, carrot, onion and s. cream to remaining stuffing mix. Transfer to a 2 qt baking dish. Sprinkle with reserved stuffing mixture. Bake, unocovered at 350 degrees for 40-45 minutes or until golden brown.

I add 1 cup cheese and most the time do not add the carrot.
